Kitchen Basics is a blog about the fundamentals: a pantry that saves a tired evening, five dishes you can cook by heart, and grains and vegetables you batch once and eat all week.

About this blog

Fundamentals first, recipes second

Most cooking advice throws a hundred recipes at you. We do the opposite: learn a handful of base skills, and the recipes take care of themselves.

Kitchen Basics is written for the person who can follow a method but never learned the underlying moves — how to keep a pantry that actually gets used, how to cook grains so they are not a gamble, how to roast a tray of vegetables that tastes like something. Get those right and dinner stops being a decision you dread at six o'clock.

  • Base over volume. Five dishes you can riff on beat fifty you never make.
  • Batch friendly. Cook grains and vegetables once, eat from them all week.
  • Plain language. Methods written the way you'd tell a friend, not a chef.
GrainsRice, oats, a chunky pasta and one whole grain like farro or barley.
TinsChickpeas, white beans, chopped tomatoes, tuna or sardines.
SharpVinegar, mustard, lemons, a jar of good olives or capers.
AromaticsOnions, garlic, a bag of carrots, oil and a few dried herbs.
